I was diagnosed a year ago, and boy has my life been turn upside down. From not being able to go to my favorite restaurants, to having kitchen staff have no clue as to what I’m talking about. It can be frustrated, by my love of cooking and experimenting has brought me to fall in love with five cookbooks that have made all the difference. 

What’s the Deal with Celiac Disease?

First things first, let’s talk about celiac disease. You might have heard about it, but what exactly is it? Well, celiac disease is an autoimmune disorder that affects about 1% of the population. It’s a bit like having a gluten allergy cranked up to the max. Gluten, a protein found in wheat, barley, and rye, becomes the villain for those with celiac disease. When someone with celiac disease consumes gluten, their immune system goes haywire, attacking the lining of their small intestine. This can lead to a host of not-so-fun symptoms, including stomachaches, fatigue, skin issues, and even nutrient deficiencies. Ouch!

If you’re diagnosed with celiac disease, the only known treatment is a strict gluten-free diet.
